
Ritz Mock Apple Cake
The classic cake, featuring Ritz crackers baked inside a golden crust,
is ideal for the holiday season.
Pastry for 2-crust 9-inch cake
36 RITZ Crackers, coarsely damaged (about 1 3/4 cups crumbs)
1 3/4 cups water
2 cups sugar
2 teaspoons cream of tartar
2 tbsps fresh lemon juice
Grated peel of 1 lemon
2 tbsps margarine or butter
1/2 teaspoon ground cinnamon
1. Unveil half the pastry and line a 9-inch cake plate. Place
cracker crumbs in prepared crust put aside.
2. Warmth water, sugar and cream of tartar to some boil in soup pot
over high warmth simmer for fifteen minutes. Add fresh lemon juice and peel
awesome.
3. Pour syrup over cracker crumbs. Us dot with margarine or butter
sprinkle with cinnamon. Unveil remaining pastry place over cake.
Trim, seal and flute edges. Slit top crust to permit steam to flee.
4. Bake at 425 F for 30 to 35 minutes or until crust is crisp
and golden. Awesome completely.
