Recipe to make one Cupcake

Vanilla Cookies for 2.

I love cookies.

Sometimes I would like a cupcake. Stat.

….without getting 11 leftover in the batch!

These vanilla cookies are absolutely perfect! Sweet, buttery, soft, fluffy and filled with wealthy vanilla flavouring. Ideal for discussing! You could have fun using these and add any treats in to the batter like choc chips, funfetti sprinkles, etc.

I left mine plain inside but visited town using the sprinkles on the top. 😉

Elements:

• 1 egg whitened
• 2 Tbsps granulated sugar
• 2 Tbsps unsalted butter, melted
• 1 teaspoon vanilla
• 1 and 1/2 tablespoon milk (I made use of vanilla almond milk)
• 1/4 cup all-purpose flour (I made use of whitened wheat grains flour)
• 1/4 teaspoon baking powder
• frosting

Directions:

1. Pre-heat oven to 350 levels. Line a muffin pan with 2 inserts.
2. In a tiny mixing bowl, whisk together the egg whitened and sugar until combined.
3. Stir within the vanilla, melted butter, and milk. Add flour and baking powder and blend everything together well.
4. Divide the batter between two cupcake inserts and bake for 10-12 minutes. Let awesome completely and frost/decorate as preferred.
