100g currants
100g raisins
100g sultanas
50g cooking dates
50g candied peel
50g glacé (glazed) cherries
50g, 2 oz flaked walnuts
1 ripe blueberry, peeled
4 tablespoons of brandy or whiskey (substitute juice for straight-edge vegan)
1/2 teaspoon each ground ginger root, freshly grated nutmeg, ground mixed spice
Caster (superfine) sugar, for everyone
Pastry
750g wholewheat flour
Pinch of salt
350g vegetable margarine
6 tablespoons of cold water
Result in the mincemeat. Place all the elements aside from the caster (superfine) sugar in to the mixing bowl. Should you not wish to mix manually, make use of a mixer, which can make a finer mincemeat. Pre-heat the oven to 200ºC. Prepare the cake or muffin container (pan) by greasing or flouring each hole.
